"This is a lace I have wanted to go too for a long time but have to get off the bus early to do so. Protein as an O type blood, which needs ani.al protein more than the younger blood types of A and B and AB. As I have learned about the importance of grass fed beef and pasture raised chickens, and pasture raised eggs, this is a great place to have better conversations about animal protein. I want to go back to a favorite of beef liver, onions and bacon (uncured better), to have once a week. I old classic way of buying by the best craft persons who sale with respect to the product and its best history. Farmers Market is another way and a good fish place, we need fresh fish to eat at least a couple times a week. Freeze less, eat fresh, and be simple and clean, no prepackaging. Put your money on fresh and stay away from doctors and over prescribed medication. Prepackaged convenience foods will make you sick and unhealthy. The best drug is fresh foods, no chemical sprayed fruits or vegetables. Others countries they buy for for the day, not stocked up frozen foods. Our taste buds are dead to fresh natural flavors, less salt and less sugar. Fresh is best."

"Hudson & Charles is a meat shop where chefs shop!!! They dry-age steaks in house and will cut a 2" ribeye while you wait. Explained how to reverse-sear properly. Bones for stock are free if you ask nice. Bacon ends sold by the bag - breakfast gold. 10/10 for this shop!"

"I really love the sandwiches that H&C has on offer and have always found the staff to be very attentive. Their primary function is a butcher shop, so the meats are top quality and they use them in their very creative sandwich menu. I've ordered three of their sandwiches so far (the Classic, the Balboa and the BBQ beef), and they were all excellent. The Balboa (see picture) is basically a Cubano, but made with their own house-made ham and a remoulade, which makes it a bit creamier. If you like hot sandwiches like me, I also recommend the BBQ beef, which is a super flavorful smoked brisket on a brioche bun. I will def be back to try more of the menu."
